Last week, I decided to make beef stew..and that beef stew kinda suit for children taste..I guess...its not too spicy although i put more than enough of black pepper..
my mom got 2 plastic of red meat from the mosque in Aidul Adha... I know it been long time from Aidul Adha celebration but that meat had been frozen..its not problem right....as long its not been outside in room temperature for the long time...
it's scare me out, when I heard from the news talking about death from food poisoning...
so for the precaution it's better not let the meat or something frozen food in outside for 2 hour (yeah I think so cause I let the meat to be defrost for 1 hour or 2 hour..depend from the size of the meat/chicken)
I remember first time to cook meat, I was cooking with my sister..it was first try make beef stew. kinda hard because I don't know how to cook meat in right way...I was afraid that meat will turn to gristle (liat)...that why I don't like to cook meat..but my perception has change cause now I know a little bit info for cooking meat...(not pro..but had tried to impove from times to another time...hihi)
so I started on meat first...I cut it into thin and small slice...its not too thin and small...moderate size..but smaller than meat size in gulai daging, kerutuk daging, rendang daging dishes...(sorry I got not picture for the cooking process cause I forgot to take it...)
wash it and dried it little bit...put in the refrigerator for a while...
then I move to the ingredient for the beef stew...
2.5 kg of meat
2 Holland onion , chopped
1 carrot, sliced
4 diced of potatoes
3 clove of white onion, minced
4 red chili
Salt
5 tbsp of ground black pepper, I used the black pepper seed and mash it with lesung (1/2 clench of fist)..
1, 1/2 tbsp corn flour, dissolve in warm water
1 cube of beef stock, diced
3 tbsp of soy sauce (replacement of Worcestershire sauce)
enough warm water to soak the meat
while setting up the ingredients I boiled the carrot together with potatoes...
Then after done the preparation for cooking. The first thing, fried the meat for 10 minute...fried it until it became pale color...(red ---> pale brown) or medium
heat the pan and oil until it became suitable for frying..I use the oil from previous fried (meat)..it will give the flavor to the stew..
stir fry the white onion and chili until u can smell the white onion smell..then put the hollands onion...after that put the ground black pepper..stir fry it until the union became golden colour or the onion became caramelize and smell of ground black pepper..and then put the cube of beef stock..cook for a while in medium low heat...
pour enough water in the pan...stir it...also add the potatoes and carrot, I used all broth from potatoes and carrot I boiled and add salt, soy sauce and other seasoning...then add the meat into the pan and soak and boiled it for a while...
then I add the corn flour in the stew for thicken the stew/soup(kuah)...I don't used the common flour like others recipe...
Then serve it with white rice and fried egg...Thumbs up...

and I forgot to add potatoes and carrot in the latest beef stew dish.
